Membuat Mie Laksa ( Homemade Laksa Noodles )
Resep ini mudah dibuat dan cepat, tapi kalau menyukai tekstur mie laksa yang lebih kenyal tambahi jumlah tepung kanji dan kurangi tepung berasnya pada campuran adonannya.
Untuk ukuran mie laksa yang besar dapat digunakan cetakan kue (pilih lempeng yang berlubang rata) atau kalau mau berukuran kecil dapat digunakan potato ricer. Cetakan kue sempritnya saya beli di Toko Lena, di Pasar Pringgan dan potato ricer nya dapat dibeli di Ace Hardware. Selamat mencoba.
If you want to make laksa and you can not find the noodle, the simples way is replacing it with rice noodle that is available almost every where in Indonesia, but if you want to make the more authentic laksa noodle, you can try this recipe (I found in internet with a slight adaptation) that is quite simple.
Untuk biang / for the starch
70 gr tepung kanji
70 gr tapioca flour
50 ml air
50 ml water
150 ml air mendidih
150 ml boiling water
Untuk adonan / For the dough
300 gr tepung beras
300 gr rice flour
80 gr tepung kanji
80 gr tapioca flour
1 sdt garam
1 tsp salt
150 ml air mendidih
150 ml boiling water
Cara Membuat biang / Preparation to make the starch
Aduk rata tepung kanji dan air dalam mangkok. Masukkan air mendidih (benar-benar mendidih), aduk sampai mengental dan berwarna agak bening, sisihkan
Mix well tapioca flour and water in a bowl. Pour in boiling water (really boiling), stir until starch is formed and looks transparent. Set aside.
Cara membuat adonan / praparation to make the dough
Aduk rata tepung dan garam, masukkan adonan biang aduk lagi. Masukkan air panas sedikit demi sedikit sampai menjadi bola dan uleni sebentar. Sisihkan
Mix well all flour and salt. Add in the starch and continue mixing, add the hot water a little at a time until the dough is formed and continue kneading for a short time. Set aside.
Didihkan air dalam panci
Bring the water to a boil
Take a portion of the the dough and place it into the mould. Press directly on the boiling water. Once the noodle float, remove off the water with a strainer and dip into cold water, drained well and place it on a cloth to stop it sticking.
